This coffee was dried and processed as a natural after an extended fermentation where the coffee was stored in GrainPro bags for 72 hours. Once fermented, drying took 20 to 25 days to reach a moisture content of 10.5%.
Raul Manueles is a producer who works on the Caballeros farm and manages the Xinacla mill. Raul is 65 years old now and has been working with coffee since he was 16 years old.
